Walnut Bran Muffins 1 cup spelt flour Preheat the oven to 425 degrees. Spray 12 muffin tins with a non-stice spray or line them with paper muffin cups. In a medium sized bowl, mix together the dry (first six ingredients) and the walnuts. In a small bowl, combine the applesauce, cream & water mixture and the eggs. Mix well. Make a hole in the center of the dry ingredients. Pour in the egg mixture and stir just until all the dry ingredients are moistened. Do not over-mix. Spoon the mixture into the prepared muffin tins, filling each about 2/3 full, dividing the mixture equally. Bake for 15 to 18 minutes, until a toothpick inserted in the center comes out clean. Remove from the oven and cool for 5 minutes before serving. Makes 12 muffins. 1 muffin: Food Exchanges:
