Walnut Bran Muffins
Add to your fiber count for the day with these fragrant, moist muffins.

1 cup spelt flour
1/4 cup wheat bran (fine)
4 teaspoons baking powder
1/2 teaspoon salt
1/4 cup Sugar Twin brown sugar replacement (or other alternative sweetener)
3/4 teaspoons cinnamon
1/2 cup chopped walnuts
1/3 cup applesauce
1/3 cup heavy cream + enough water to equal 3/4 cup liquid
2 eggs

Preheat the oven to 425 degrees. Spray 12 muffin tins with a non-stice spray or line them with paper muffin cups.

In a medium sized bowl, mix together the dry (first six ingredients) and the walnuts.

In a small bowl, combine the applesauce, cream & water mixture and the eggs. Mix well.

Make a hole in the center of the dry ingredients. Pour in the egg mixture and stir just until all the dry ingredients are moistened. Do not over-mix.

Spoon the mixture into the prepared muffin tins, filling each about 2/3 full, dividing the mixture equally.

Bake for 15 to 18 minutes, until a toothpick inserted in the center comes out clean. Remove from the oven and cool for 5 minutes before serving.

Makes 12 muffins.

1 muffin:
7 grams total fat; 18 grams total carbs; 2 grams fiber; 2 grams protein
