Salmon Frittata
If you enjoy quiche, you'll love this frittata.
Enjoy it with a green tossed salad or steamed green veggies!


4 large eggs
1 cup heavy cream
1 teaspoon dried dill
1/8 teaspoon cayenne pepper
dash Worchestershire sauce
3/4 teaspoon salt
1/4 cup minced green onions
1/4 cup sliced mushrooms
8 ounces cooked salmon, skinned and boneless
1/2 cup shredded provolone cheese

Preheat the oven to 350 degrees. Prepare a 3-quart casserole by spraying it with a non-stick spray. Set aside.

In a medium bowl, mix together the eggs, cream dill, pepper, Worchestershire, and salt until it is well blended. Set aside.

Layer the onions, mushrooms, cheese, and salmon on the bottom of the greased casserole. Pour the egg mixture over all.

Bake about 45 minutes or until the center is puffy and a knife inserted in the center comes out fairly clean. There may be a bit of melted cheese on the knife. Remove and let stand for 5-10 minutes.

Serves 4-5.
