Hot soup is the perfect comfort food in the winter. A favorite healthy, low glycemic choice is lentil soup. Lentils can be served not only in soups, but also as a side dish or even used as a salad ingredient. When you are in a hurry, lentils cook up quickly. They are a terrific source of fiber, folate, iron and phosphorus. Even better, adding lentils to your dishes will help to reduce the glycemic index of the dish. When cooking lentils, add salt to after cooking to keep them tender. Eating lentils with foods containing vitamin C, like tomatoes and fruits, helps the body to absorb the iron.

Lentil Soup - This one is from Alton Brown on the Food Network. If you don't have grains of paradise in your pantry (I don't), just substitute black pepper.

Lentil Cookies - Just for fun, I am including this lentil cookie recipe. I have not tried it, but if you do, please let me know how it turns out. Naturally, you need to substitue a low glycemic sweetener for the sugar.
