Cranberry Nut Bran Bread
Everyone will enjoy this tasty bread.

1 cup dried cranberries, with no sugar added
1 cup boiling water
1 cup all bran cereal
1½ cups plain soy milk
1 egg
1½ cups whole wheat flour
1 tablespoon baking powder
½ teaspoon cinnamon
½ teaspoon salt
1 cup chopped walnuts
2 tablespoons butter, melted

In a medium bowl, pour the boiling water over the cranberries and set aside. Preheat the oven to 350 degrees.

In a small bowl, mix together the cereal, milk, and egg. Set aside.

In a food processor, place the flour, baking powder, cinnamon and salt. Process to mix.

Completely drain the cranberries, and then add them to the processor with the flour mixture. Process briefly to combine. Place the mixture in a large bowl. Stir in the walnuts. Add the cereal mixture, stirring just to mix. Stir in the melted butter. Pour into a large greased loaf pan.

Bake 1 hour at 350 degrees or until a wooden toothpick comes out clean when inserted in center.

Makes one 9-inch loaf.
